*3rd repeat Violation* Observed the following line items out of temperature in the open top section of the cookline between 46-57*f degrees. Mascarpone cheese, cream cheese, arugula, cantaloupe, various sliced cheeses, watermelon, honey dew, pork sausage, sliced turkey, cooked chicken, and raw shell eggs. Per PIC items were out of temperature less than 4 hours and sent to walk-in fridge to cool. Corrective Action: Corrected at time of inspection.

Observed cooked chicken, Pico de Gallo, chickpeas, and corn in the cold holding units at the cook line with temperatures ranging from 52-57*F. Per PIC these items were prepped 2 hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to the walk-in cooler to rapidly cool to 41°F at time of inspection. Discussed utilizing proper cooling methods and a temperature probe prior to placing at the cook line. Corrective Action: Corrected at time of inspection. This is a second consecutive priority repeat violation.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Observed pico de gallo, mozzarella, cut melons, and cut tomatoes with internal temperatures ranging from 50-62*F in the three reach in cold holding units on the left side of the cook line. PIC stated the foods were replenished before the lunch rush around 10am. Ambient air temperatures for the units, taken with a min/max thermometer, was colder than 40*F. PIC stated the A/C went out this morning causing temperatures in the kitchen to be highest during lunch time and is currently being fixed. PIC placed the food into the walk-in to rapidly cool down to 41*F. Correct By: Corrected At Time Of Inspection
