Observed cooked rice in the harvest cooler, next to the ice machines, with an internal temperature of 48*F, placed into the unit 2 hours prior per PIC. Time/temperature control for safety foods should be colder than 41*F to prevent the growth of pathogens. An ambient air temperature taken of the unit with a min/max thermometer was 58*F. PIC moved the food to a different walk-in. Correct By: Corrected At Time Of Inspection
