Employee said it had been prepared over an hour prior, item was moved and spread on sheet pans at time. Please ensure food items are cooled in shallow, uncovered containers until they reach 41 degrees F to facilitate most efficient heat transfer. Corrective Action: Corrected at time of inspection.
