Observed TCS food items with internal temperatures between 43-47F in the reach in cooler the front entrance. TCS items included milk, raw shelled eggs, dairy custard desserts, deli meats, and cheeses. The person in charge stated the items had been stocked into the cooler less than 2 hours ago and moved all TCS food items to the walk-in cooler for rapid cooling.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed reach in cooler with minimum ambient temperature between 43-45F. TCS foods stored for cold holding inside the cooler had internal temperatures of 43-47F. The person in charge discontinued used of the cooler for TCS cold holding and placed a work order for service at the time of inspection.
