Observed cut watermelons, honeydew and cantaloupe inside of the produce cooler. The PIC indicated that the cooler was opened frequently during the last two hours. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. The PIC moved all of the cut melons into the freezer to cool down to 41F before being placed back into the produce cooler rapidly. Correct By: Corrected At Time Of Inspection
