The service kitchen has a 2-compartment sink and one compartment must only be used for handwashing. According to PIC and the employee in the cottage, the plates, cups, and utensils that are used by residents for dining during meals are hand washed and rinsed in the 2-compartment sink, without being sanitized. PIC will ensure that the dishes are sent to the main kitchen to be washed and sanitized using the 3-compartment sink or the dish machine. UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use.
