Inspector's notes

Observed wet dishes air drying in a rack on the counter/in the dish machine. The dish machine has been inoperable for several months. The service kitchen has a 2-compartment sink and one compartment must only be used for handwashing. According to PIC and the employee in the cottage, the plates, cups, and utensils that are used by residents for dining during meals are hand washed and rinsed in the 2-compartment sink, without being sanitized. PIC will ensure that the dishes are sent to the main kitchen to be washed and sanitized using the 3-compartment sink or the dish machine. UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.The service kitchen has a 2-compartment sink, which is used for handwashing and rinsing plates, cups, silverware etc. According to employees, the dish machine does not work and was not in use during the inspection. Resident dishes and equipment must be transported to the main kitchen to be properly washed/rinsed/sanitized. The sink used for handwashing must not be used for any other purpose. Also observed a homestyle refrigerator. When the refrigerator is replaced, it must be replaced with an NSF or equivalent commercial refrigerator. Discussed adjusting the stopper on the pull-down sprayer at the sinks with a pull-down sprayer.
