Inspector's notes

Observed wet dishes air drying in a rack on the counter/in the dish machine. The dish machine has been inoperable for several months. The service kitchen has a 2-compartment sink and one compartment must only be used for handwashing. According to PIC and the employee in the cottage, the plates, cups, and utensils that are used by residents for dining during meals are hand washed and rinsed in the 2-compartment sink, without being sanitized. PIC will ensure that the dishes are sent to the main kitchen to be washed and sanitized using the 3-compartment sink or the dish machine. UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use. Inspector's notes

Observed milk, sour cream, butter, sliced deli turkey, and American cheese cold holding in the homestyle refrigerator with internal temperatures of 46-49F, probe thermometer, verified by person in charge (PIC). According to PIC, the milk and butter were placed into the refrigerator 2 hours prior to inspection and the additional TCS foods were stored overnight. PIC voluntarily discarded the turkey, cheese and sour cream, see embargo form, and placed the milk and butter into a different cold holding unit. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. See violation #33. Corrective Action: Corrected at time of inspection.

Observed the homestyle refrigerator with an ambient air temperature of 50.6F, min/max thermometer, verified by PIC. The TCS food in the unit had an internal temperature of 46-49F, see violation #22. PIC will not use the refrigerator to store TCS food until the unit is maintaining 41F or less. The homestyle refrigerator must be replaced with commercial. All food service equipment shall be commercial grade and meet the standards of design and construction in accordance with the American National Standards Institute (ANSI), National Sanitation Foundation or NSF International (NSF), or equivalent standards. Equipment for cooling and cold holding TCS food must be sufficient in number and capacity to provide proper food temperatures (41F or below). Re-inspection 10 days. Corrective Action: Correct prior to re-inspection.

No County legal action will result from this inspection.The service kitchen has a 2-compartment sink, which is used for handwashing and rinsing plates, cups, silverware etc. According to employees, the dish machine does not work and was not in use during the inspection. Resident dishes and equipment must be transported to the main kitchen to be properly washed/rinsed/sanitized. The sink used for handwashing must not be used for any other purpose. Also observed a homestyle refrigerator. When the refrigerator is replaced, it must be replaced with an NSF or equivalent commercial refrigerator. Discussed adjusting the stopper on the pull-down sprayer at the sinks with a pull-down sprayer.
