Observed shut off nozzle trigger device on the end of hose attached to atmospheric vacuum breaker supplied mop sink. Hose was removed. Talked to staff about how to use the device. Corrective Action: Corrected at time of inspection.

Observed the mechanical dish machine dispensing <10ppm chlorine concentration. The chlorine container was running low. PIC replaced the container. Sanitizer now reads 100ppm. Observed the main walk in refrigerator holding 51F with the following TCS food items stored inside: 6o boxes of full cooked ham at 44F and averaging 54lb per box, sliced turkey 47F, lettuce 48F, and sliced cheese 45F. The sliced turkey and lettuce were prepared today. PIC called for maintenance to arrive same day. Discussed moving items to a working cooler or freezer if possible. Observed the main walk in refrigerator holding 51F, captured using inspector's min/max thermometer. The item that had been in there longest was the fully cooked ham that had an internal temperature of 44F. Refrigeration temperatures must not exceed 41F. Please correct. **NOTE.. This refrigerator has doors from the front that open as needed per order. This may be causing an inconsistent increase in temperature. Temperature may need to be adjusted to around 37F, to ensure TCS food items stay 41F or below. Correct By: Correct Prior To Reinspection
