#24 — Time as a Public Health Control: Procedures and RecordsPriority foundation3-501.19

Inspector's notes

-- Times stamps for multiple TCS foods holding in prep table on sandwich assembly line inaccurate by about an hour. The time stamps for cut lettuce and sliced tomatoes had time as a public health control (TPHC) start time of 11:44 AM & 11:47 AM AM with discard time of 3:44 PM & 3:47 PM. The TPHC audit began around 10:57 AM. Sliced Monterey jack cheese and American cheese had TPHC start time of 11:42 AM with discard time of 3:42 PM. The cheese had internal temperatures ranging between 47°F-53°F using probing thermometer. Per person in charge (PIC), the TCS foods were removed from cold holding and placed in the unit approximately 3 hours prior to the inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Automated system was also adjusted to reflect Mountain Standard Time (MST). Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and accurate time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.

PIC stated the milks were placed in the cooler around 8:00 AM this morning and discarded the milks. The ambient temperature of the cooler appeared to be around 55-60*F and will not be used for cold holding TCS food items until it is repaired or replaced and able to maintain an ambient temperature of 41*F or below.
