Observed pizza station cooler with an ambient temperature of 58*F measured with inspector min/max thermometer. Chef stated that the food products were stocked 30 minutes prior to inspection. The products included shredded cheese, tomato sauce, sliced tomatoes, sausage, and pepperoni slices. Products measured between 46*F-50*F with inspector probe thermometer. Chef had staff remove unnecessary products and set up ice bath for remaining products for dinner service. Chef called for service at time of inspection. Arrived onsite for a courtesy visit to review settlement agreement with Permit Owner and Management team the following was reviewed:1. Keep a copy of the Certified food protection manager certification onsite, what was shown was completion certificate of the class.2. Remember to attend the MCESD Department AMC class 9/26 from 845am-11am.3. Speak with General Contractor to make some adjustments and finish/ eliminate paths of migration for pest AND areas where water and debris can become stagnant. (Photos of areas still needing attention were shared with Permit Owners via email)4. Clean out the floor in the small employee restroom where the water heater is stored.5. Continue with plans of hiring professional cleaning crew before all repairs are completed and after repairs are completed.6. Continue with in house cleaning procedures too.7.
