PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. --Gravy being hot held was at 110°F. Temperature was verified by by the person in charge (PIC) using the establishment's thermometer. This was voluntarily discarded.
