Dairy creamer in carafe found in cooler below front counter with internal temperature of 49-51*F. PIC stated they last checked the cooler around 6:00 AM and the cooler was working properly. PIC discarded the creamer. The ambient temperature of the cooler was between 43-45*F according to ambient thermometers in the cooler. The cooler will be monitored and will not be used for cold holding TCS food items until it is able to maintain an ambient temperature of 41*F or below. ***2nd consecutive violation*** Corrective Action: Corrected at time of inspection.

Inspector's notes

Dairy creamer found in small reach-in cooler below front counter with internal temperature of 50-52*F; temperatures taken with inspector's calibrated probe thermometer. PIC stated the creamer had been in the cooler since early this morning and the cooler was last known to be below 41*F at 6:00 AM today. PIC discarded the creamer. The ambient temperature of the cooler was found to be 50-51*F during the inspection. The cooler will not be used for cold holding TCS food items until it has been repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate coolers are available for normal operations to continue. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
