Observed a plastic bin of oysters without their original shellshock tags attached to the bin. The establishment had a large pile of oyster tags and the manager was not able to identify which tag belonged to each box. Most of the 50+ tags did not have discard dates. As stated on each tag, "This tag is required to be attached until container is empty or retagged and thereafter kept on file for 90 days." Manager discarded the untagged oysters at time of inspection, see embargo list. Oyster tags are to only be removed from the oyster box after the last oyster is sold, then tags are to be numerically dated with the date the last oyster was sold. PRIORITY VIOLATION-3-403.11, P: Reheating for Hot Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4618/AMC-Toolbox---Reheating. --Observed Person in Charge (PIC) reheat cooked rice in the microwave. After reheating, PIC placed rice on the prep line for hot holding when the rice had an internal temperature of 105°F. PIC was asked to reheat the rice to proper temperature. Rice was reheated to only 125°F. PIC was not knowledgeable of the proper temperatures to reheat food for hot holding. Discussed proper reheating procedures with the PIC and rice was reheated properly at the time of inspection. TCS food must be reheated to 165°F for 15 seconds and shall be done rapidly (does not exceed 2 hours). TCS food reheated in microwave for hot holding must be reheated to 165°F and food is rotated or stirred, covered, and allowed to stand covered for 2 minutes after reheating.
