Observed sanitizer compartment of 3-comp sink with 0PPM quaternary ammonium sanitizer while having dishware actively inside the basin. PIC remade the sanitizer such that the quat concentration was measured between 150-400PPM at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

Unit in question had an ambient temperature of 46.9'F. PIC stated the unit was measured at 35'F earlier at 5am and temperature has not been taken since. Cold TCS foods must be held at 41'F or below and must not be out of temperature for longer than 4 hours. All items were embargoed and PIC discarded items at time of inspection.
