Inspector's notes

observed inside the front sandwich prep. reach-in coolers(lids open), 3 pans of sliced tomatoes at 48 deg f . also in the middle reach-in cooler, top panel, a pan overfilled with sliced salami at 49-50 deg f . discussed the proper cold holding with manager on duty. manager removed overfilled food pans. suggested to keep excess food at the facility walk-in cooler . also suggested not to overfill tcs food pans. suggested to keep overfilled pans into shallower pans and place additional food in the bottom refrigerator panels till needed. manager removed food. new cooler tcs food at 41 deg f obtained from walk-in cooler. corrected. also recommended to keep reach-in top lids closed when not in use. Corrective Action: Corrected at time of inspection.
