PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS foods in pizza cooler were in unit less than 4 hours. All TCS foods improperly cold held in pizza cooler were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Per PIC, TCS foods (i.e. - mozzarella cheese, ricotta cheese, ravioli, diced chicken, spicy sausage) on top of pasta cooler were in unit more than 4 hours and were voluntarily discarded at time of inspection. Do not use equipment to house TCS foods until units can maintain foods at an internal temperature at 41*F or below. ___________________________PIC called for service on machinery at time of inspection.
