observed in the front service area, all reach in food coolers lids were left open, food pans were overfilled. product such as sliced deli ham, turkey, sausage patties and sliced cheddar cheese at 54-60 deg f . discussed with shift leader some of the strategies available. recommended not to overfill the food pans, suggested to place excess food in the walk-in cooler, suggested to keep reach-in cooler lids closed till an order placed. manager provided a coaching moment. all food in temperature danger zone was discarded. see embargo Corrective Action: Corrected at time of inspection.
