at the time of deli inspection, observed at the sandwich cooler, some pans of deli ham, deli chicken, and deli turkey . unit lids were left open. checked dli meats for temperature. 46-51 deg f . showed facility manager. discussed with manager , strategies such as keeping less food atop reach-in top panels, and ensuring the reach-in cooler lids are closed when not in use. manager removed deli meats, also suggested to keep excess deli meats in a pan and keep in the lower sandwich cooler till needed. please ensure rte/tcs is kept at 41 deg f . observed at the food cooler, directly adjacent to sandwich prep, reach-in coolers, multiple pans of deli ham at 48-51 deg f . observing food pans. noted deli meats portioned and placed in overfilled plastic tubs, and placed in the cooler. discussed with manager the cooling strategies for on site prepared tcs food. suggested not to overfill the plastic food pans. levels reviewed. also strategies such as placing cooling deli meats in the walk-in speed racks to ensure tcs food is rapidly cooled to 41 deg f . manager removed deli meats, removed excess food and placed into smaller pans, and placed in the walk-in cooler for additional cooling. manager provided deli staff additional training.
