sushi, packages assortment of mahi, California rolls, sushi rolls containing rice, cooked shrimp and seafood salad in the front self service cooler overfilled, all noted at 53 deg f . Spoke to facility sushi chef on duty . recommended to manager not to overfill the food self service cooler. please store tcs food in the facility walk-in cooler till needed. Also at the time of inspection arrival, a pan of seafood salad was left on the counters. temperatures taken, indicating 54-57 deg f . please ensure rte/tcs food is kept at 41 deg f or cooler. Manager removed all tcs food in temperature danger zone. Corrective Action: Corrected at time of inspection.

observed some of the on site prepared sushi containing tuna, raw fish, temperature checked. noted at 49 deg f . discussed the tcs food temperature. suggested to store one tier in the front self service cooler, utilizing the facility walk-in cooler to ensure 41 deg f maintained for the rte/tcs. manager stated food was prepared at 2. on site packed sushi were relocated to walk-in cooler. observed the sushi plates prepared on site, containing raw fish and rice, and cooked shrimp for self service in the front service sushi cooler at 47-51 deg f . Case was overfilled. suggested to utilize walk-in cooler for all fresh food preparation cooling, and place a smaller amount in the front display self service cooler. per staff on duty, prepared this morning at 9am. manager removed. all relocated to the walk-in cooler to ensure 41 deg f maintained. please monitor cold holding for the onsite prepared tcs.
