Corrective Action: Corrected at time of inspection. Cut cabbage, bagged salads at 46*F to 52*F internally. Manager stated they had been delivered less than two hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Additionally, melon being cut and packaged at the time of inspection was moved to another cooler to allow to properly cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Corrective Action: Corrected at time of inspection. Cut melon, salsa, spinach dip and guacamole with cut tomatoes in A-frame produce cooler at 43*F to 52*F internally. The cut melon had been in the unit about one hour and was returned to the walk-in to recool. The dips had been in the unit more than a day and were embargoed, manager discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
