Inspector's notes
Employee washed and rinsed dishware then did not finish with final rinse of quat sanitizer. Instructed employees on proper warewashing procedures of wash with soap, rinse with clean water, then sanitize in quat sanitizer with a concentration of 150-400ppm for minimum 1 minute contact time. UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use. Corrective Action: Corrected at time of inspection.
