Inspector's notes

Observed two large pans of cooked tamales inside of the walk-in cooler without any date marking on them. According to the person in charge, the tamales had been cooked on Saturday. Also observed a pan of cooked red chili beef with a date mark of 5/12-5/19. Discussed with person in charge that date marking includes the day of cooking as day 1, and then 6 more days, which for the red chili beef ends on 5/18, not 5/19. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed an ice scoop laying down inside of the ice machine. Discussed with person in charge to store the ice scoop in a clean, dry container or if they choose to continue storing it in the ice, that they store the scoop with the handle facing straight-up so it is above the surface of ice. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Inspector's notes

Observed a container of raw shell eggs stored over a small plastic tub of ready-to-eat chopped raw onion and cilantro mix and another small container of olives in the walk-in cooler. The container of onion-cilantro mix and olives was embargoed at time of inspection (see embargo form). All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed cooked beans from the day before inside walk-in measuring at an internal temperature of 44-46°F with probe thermometer. Discussed with PIC that Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --All time/temperature control for safety (TCS) food items in the walk-in refrigerator measured internal temperatures between 44°F-52°F. Thermometer was calibrated on site. They included various cooked meats, cooked veggies, cooked beans, cooked rice, and salsa. Walk-in refrigerator measured an ambient air temperature of 47°F via min/max thermometer. Per the owner, a repair technician serviced the unit and installed a new part for it about 2 hours prior. They had increased the temperature of the walk-in temporarily to defrost the unit. The walk-in was adjusted and measured an ambient air temperature less than 41°F. Food items out of temperature were portioned into smaller containers to facilitate rapid cooling. Reviewed cold holding requirements with the owner and discussed moving food items into the other walk-in refrigerator during repairs. Correct By: Corrected At Time Of Inspection
