Inspector's notes
Observed various cheeses, cut spinach, cut lettuce, and hardboiled eggs cold holding in the 2-door refrigerator with internal temperatures of 46-50F, probe thermometer, verified by person in charge (PIC). According to PIC, the food delivery was received that morning and the refrigerator door had been frequently opened. PIC voluntarily discarded the American and Swiss cheese, see embargo form, and placed the other TCS foods into the 3-door cooler to rapidly cool to 41F or less. The 2-door unit was rearranged to allow for adequate airflow. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
