Observed American Cheese,Swiss cheese and cheese dip with an internal temperature of 47-52*f on prep table. Discussed keeping product below fill line to prevent increase in temperature. In addition, please keep lids closed to help equipment maintain food below 41*f at all times. Prep table had an ambient air temperature of 38*f at time of inspection.

Observed butter used for the buns held at 95F. PIC said they did not have a 4 hour time policy, and they did not have a time stamp on the container or written down. Discussed cold or hot holding the butter or using 4-hour time as control. Please refer to the policy requirements provided to the PIC via email at the previous inspection. The butter was prepared an hour and a half prior. PIC placed a time stamp on the container to discard in two hours. Corrective Action: Corrected at time of inspection.

Facility usually has 1 cart off to the side of hand sink, but when low, they obtain a second cart and the 2nd cart is within a few inches of the hand sink. Ensure there is a splash guard since the hand sink is within 24 inches of food contact surfaces. Corrective Action: Correct prior to next routine inspection.
