Inspector's notes

Observed the top half of the cream cheese cold holding in the sandwich refrigerator with an internal temperature of 46F, and the cold brew in the draft refrigerator with an internal temperature of 54-55F, probe thermometer, verified by PIC. The cream cheese was placed into alternate refrigeration and will be rapidly cooled to 41F or less. The cold brew was discarded for being held in the danger zone for more than 4 hours. The draft cooler observed to have an ambient temperature of 53F and the cold brew was placed into the cooler 5-6 hours prior to inspection. PIC will not use the draft cooler to dispense cold brew until it is repaired to maintain TCS food at 41F or less. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. Establishment not accessible at time of inspection.Upon arrival to establishment, a dumpster and storage containers with equipment was observed in the parking lot. All of the kitchen equipment appears to have been removed and the dining room observed to be completely empty. Spoke with a contractor onsite and the remodel is anticipated to be completed by 8/23/2023. Emailed and called the development manager. Left a voicemail and provided the weblink by email to apply for a review of plans. A remodel is taking place which may require an application and plans to be submitted, and/or additional permits.
