Inspector's notes

Observed containers of red salsa in the reach-in unit in the front counter area with internal temperatures as measured using a probe thermometer of between 47°F - 50°F. Per the person in charge, the salsa is stored in this reach-in but is sometimes stored in another reach-in refrigerated unit that is right next to the door that goes into the kitchen during busy times. A min-max was placed in the unit that the salsas were initially observed to be inside of and that unit had an ambient air temperature of 41°F. A min-max thermometer was placed inside of the other unit that is sometimes used during busy times and the ambient air temperature in that unit was holding steady at 53°F. There was no food in that unit at the time of inspection. Discussed with person in charge to either keep the salsa stored in the unit that is holding at 41°F or to keep the salsa inside the walk-in cooler in order to maintain proper cold holding temperature of 41°F. ** 2ND CONSECUTIVE VIOLATION. ** Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed containers of roasted tomatillo salsa and red chili salsa inside of the red reach-in unit behind the cash register with internal temperatures as measured using a probe thermometer of 50° F. A min-max thermometer was placed in the reach-in unit for 5 minutes and the ambient air temperature was at 55°F. Per the person in charge, the salsas were prepared the day before and had been in the reach-in unit since the night before. The salsas had been out of temperature for more than 6 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection (see embargo form). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
