Observed shell stock tags for clams and oysters in pencil box with no date on the shellstock tag of when the last shellstock tag was sold. The shellstock tags from the span of the last 50 days were not marked with the sell date. The date when the last Shellstock from container is sold or served shall be recorded on the tag or label. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Discussed with the PIC the importance of marking the date on the Shellstock tag of the date of the last sale and provided Maricopa County handout. Corrective Action: Corrected at time of inspection.

Observed packaged and sealed cooked RTE ham stored below raw, uncooked packaged bacon. Observed raw packaged ground beef stored above raw pork chops. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
