TCS foods (i.e. - cucumber salad, broccoli salad, potato salad, coleslaw, tomato mozzarella salad, etc....) found at counter display case found at internal temperatures of 48*F; ambient air temperature at 48*F. Cold holding of TCS foods must be held at 41*F or below. Per food employee, foods placed in display case at proper cold holding temperature within last 2 hours. Properly store TCS foods at 41*F or below. -------- PIC had food employee remove foods from unit and place in walk-in cooler for rapid cooling. PIC placed work order for unit at time of inspection.
