Double sided hot holding unit at prep line for bone in chicken and pot pies, with an ambient temperature ranging 134-170*F (147*F bottom self, 170*F top shelf, 134*F middle shelf on one side, and 170*F on opposite side). Unit unable to hold foods at an internal temperature of 135*F or above. Person in charge to place a work order and discard of foods every 4 hours until unit can maintain foods at an internal temperature of 135*F or above.
