Inspector's notes
Observed crumbled gorgonzola cheese, sliced provolone cheese, fried eggplant, caramelized onions, beuschmel sauce, Bolognese sauce, cooked sliced sausage, cubed mozzarella, minced garlic in oil, cubed fontina cheese, and raw pounded chicken in pizza prep cooler farthest to the right holding at temperatures between 46*F and 52*F. Per person in charge (PIC), the food had been transferred from the walk-in cooler to the prep cooler 4.5 hours prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
