Observed 0 ppm chlorine sanitizer in the dish machine in the back of house, actively being used at time of inspection. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. It was discovered the detergent and sanitizer lines were switched. The machine was primed and tested correctly. Corrective Action: Corrected at time of inspection.

In the walk in cooler, observed two large, deep, metal containers of cooked Bolognese at 41-58*F. The edges of the container were around 41-43*F and the interior was between 56-58*F. Bolognese was cooked and started cooling around 9:30pm the night prior. All cooling foods are required to be cooled below 41*F within 6 hours total and below 70*F within the first two hours.
