Observed employee washing dishes at 3 compartment sink while sanitizer was checked to be at 50 ppm quat sanitizer. Manager add staff resanitize and get new solution, set at 200 ppm quat. Ensure that dishes are sanitized in 200-400 ppm quat and put in solution for at least 30 seconds. Corrective Action: Corrected at time of inspection.
