Observed a dented can on the 3 can seams located back of house. Swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged can from good cans at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the door to the reach-in cooler located front of house, detached from the hinges and is non-functional. Unit itself can still maintain 41°F or bellow. All equipment must be maintained in good repair at all times. PIC stated that they already has a work order for this unit as of last week. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed heavy condensation in and around the two prep tables used in the front of the establishment. Both prep tables measured below 41°F (35.0°F and 34.5°F) on the min/max thermometer. Thermometers calibrated with staff. Alerted the manager, who plans to put a work order in for both units. Also discussed the best practice of using lids to cover the top of the prep tables to reduce temperature differentials, which may be contributing to the condensation buildup. Prep tables are to be maintained in good working order at all times. Corrective Action: Correct prior to next routine inspection.

Second Repeat Violation. Observed broken sealant over porous aggregate in the middle of the floor in a high-trafficked area across from the dish pit. The floor is damp and holding water. Clean and dry the aggregate and reseal the floor with an approved sealant. Proper repair is required. Do not use unapproved methods. The establishment is to cover the raw concrete with an approved surface or sealant to make the area non-absorbent, smooth, and easily cleanable. Discussed premises requirements with the manager.
