#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various cheeses (49°F), deli meats (49-50°F), shredded lettuce (49°F), dairy-based and meat-based soups (48-49°F), and pouches of macaroni and cheese (49°F) cold holding above 41°F in the walk-in. The manager stated that walk-in food temperatures were below 41°F at 8:30 (1.5 hours prior). Staff noticed the walk-in was warming and unable to maintain temperatures around an hour before EHS's arrival, and a third-party servicer was already onsite to fix the walk-in. Except during preparation, cooking, cooling, or when time is used as a control, all TCS foods must be maintained at 41°F or below. Time Temperature Control for Safety (TCS) foods were moved to alternative refrigeration at the time of inspection. The walk-in was fixed and able to maintain temperatures below 41°F by the time EHS left. Discussed the importance of maintaining cold holding temperatures. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff (to immediately move TCS food to alternative working refrigeration), which resulted in the violation. Corrective Action: Corrected at time of inspection.

Observed cooked chicken meatballs (118-122°F) in the hot holding unit measuring with an internal temperature below 135°F. An employee stated the chicken meatballs had been reheated and placed in the hot holding unit less than 2 hours before temperature measurement. All other foods in the hot holding unit were above the required 135°F. The cooked chicken meatballs were reheated to 165°F and placed back in the hot holding unit, at time of inspection. Discussed hot holding and reheating for hot holding requirements with staff. After discussion with the person in charge, it has been determined that the root cause of the violation was verification, which resulted in the violation. Correct By: Corrected At Time Of Inspection
