Observed the automatic sanitizer dispenser dispensing quat sanitizer at 0 PPM. Confirmed dishes had been washed, rinsed, and sanitized today. Alerted staff who plan to hand-dose quat to the recommended range of use 150-400 PPM until the automatic sanitizer dispenser can be adjusted. Staff correctly hand-dosed quat sanitizer at time of inspection. Discussed the importance of sanitation to reduce bacterial load. A reinspection of the automatic sanitizer dispenser will be conducted in 10 days. Corrective Action: Correct prior to re-inspection.

Observed no hot water available onsite. Staff stated they had a work order already placed on their hot water and that a servicer was expected to arrive today to fix the hot water. In the meantime, staff were instructed to switch the breaker for the water heater. Staff stated the hot water returns around 1 hour after switching the breaker. Proper repair is required. A re-inspection will occur in 24 hours on the hot water. Discussed the importance of having hot water. Corrective Action: Correct prior to re-inspection

Observed two open bowls of Chinese food, at a prep table, in the kitchen. No active contamination was observed. Employees were directed to put away the food, while engaged in food prep, and move to a designated area (the dining space) to eat and drink when on food prep breaks. Eating must always occur in a designated location away from food and food contact surfaces. Drinking from closed containers (sealable water bottles or cups with lids and straws) is permitted if drinks are stored in a designated area away from food and food contact surfaces. Discussed eating and drinking requirements with staff. Corrective Action: Corrected at time of inspection.

Repeat Violation Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed a square hold in the wall by the mop sink. Establishment to repair the hold in the wall and make the surface smooth and easily cleanable. Also observed a small leak from the black pipe extending down from the sanitizing basin. The pipe has been taped and a bucket to catch water was placed below the leak. A more permanent solution is needed. Establishment to fix the leak and maintain equipment in good repair. Raw concrete was observed, in high traffic areas, in front of the three compartment sink and the drink mix station. The floor sealant has pealed up in these areas and the floor is warn down to the aggregate. The area must be smooth and easily cleanable and not made of porous-absorbable materials.
