SECOND CONSECUTIVE. Observed the cooler front of house underneath soda fountain by to-go area having an ambient temperature of 54.3°F with TCS food items like Soft whip cold foam (51°F) and heresy pies (48°F) at time of inspection. These TCS items were placed inside the cooler less than 4 hours ago per PIC. All Time Temperature Control for Safety (TCS) foods which had been in the unit for less than 4 hours were moved back to the walk-in refrigerator back of house. PIC will discontinue use of cold holding unit until able to maintain an ambient temperature of 41°F or below. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.

Observed the automatic sanitizer dispenser in the three-compartment sink dispensing Quat sanitizer measuring at 0 PPM. Staff confirmed dishes had been run through the three-compartment sink today. The person in charge switched out the empty chemical concentrate bottle for a new bottle of chemical concentrate at time of inspection. After servicing the dishwasher, the chemical sanitizer was within range. Staff to routinely test the sanitizer strength on the first cycle of dishes and check chemical fill levels. Reviewed sanitizer concentration requirements. the Corrective Action: Corrected at time of inspection.

The machine is currently cleaned on a 14-day cycle and goes through a "heat cycle" at night. More information on this process is needed. Establishment to keep documentation on the temperatures reached during this heat cycle and the product specifications on their soft-serve base, documenting whether or not the product is TCS.

Inspector's notes

Observed "keep-refrigerated" dairy-based products, single-serve milks, creamer-infused mocha and coffee bases, soft-serve creamer, and chocolate cream cheese pie cold holding above 41°F in the small refrigerator unit by the drive-thru. Staff confirmed all items had been stocked inside the small refrigerator last night, more than 6 hours prior to temperature measurement (see embargo). The unit measured 48.5°F on the min/max. Thermometers were calibrated onsite with staff. Alerted manager who put a work order in for the small cold holding unit. Staff plan to use an ice bath for Time Temperature Control for Safety (TCS) products during rushes until the unit is able to maintain foods below 41°F. Discussed the importance of properly cold holding foods. Corrective Action: Corrected at time of inspection.
