Ambient air temperature of cooler was holding 41*F at time of inspection. Noticeable organic debris was observed on cardboard boxes where cheese is stored. Discussed monitoring defrost cycle and ensuring curtain remains closed to help maintain cold temperatures below 41*F on TCS foods. Observed lunchables: ham and cheddar, extra cheese, pizza with pepperoni with an internal temperature of 52*F. Chest cooler was holding ambient air temperature of 37-41*f in various areas of unit at time of inspection. It was determined TCS foods were stacked high past load limit and boxes blocking air flow in back of unit.
