Observed shredded lettuce, sliced tomatoes, and sliced American cheese in small cold holing unit near fry hopper with an internal temperature ranging 46-48*F. Person in charge stated foods were placed in unit over 4 hours prior to inspection and voluntarily discarded. Observed water dispensing at hand sink near frozen yogurt machine at 75*F. No cold water able to dispense at 3-compartment sink. All hand sinks must have 100*F water available, and all sinks must have cold and hot water. Person in charge began calling maintenance and will reach out upon completion of work. Hot water valve opened and able to reach a temperature of 108*F at hand sink. 5-103.11 - Priority Foundation: Capacity-Quantity and Availability Predefined Comment: Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Predefined Comment: Provide adequate hot water at all sink fixtures prior to re-inspection. Predefined Comment: Hot and cold water under pressure is required at all sink fixtures.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced cheese with internal temperature of 47*F and butter with internal temperature of 52*F both found in prep table cooler. The cooler had an ambient temperature of 52*F. The cheese was prepared and placed in the cooler around 5:00 AM, while the butter had been in the cooler since yesterday. The cooler was last checked this morning at 5:00 AM and it was at 38*F. PIC discarded the cheese and the butter. Other food items including shredded lettuce and sliced tomato were prepared within the last hour and were also found in the cooler with internal temperatures also above 41*F. PIC moved the lettuce and tomato to the walk-in for cooling and continued cold holding. The lowest ambient temperature of the cooler during inspection was 53*F. The cooler will not be used for cold holding TCS food items until it repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate coolers are nearby to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
