#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed leaf lettuce on counter with an internal temperature of 77*f at time of inspection. PIC, stated sandwiches had been previously worked out. Discussed importance of moving TCS foods to refrigerator once prepping is completed and to minimize prepping time by working on smaller portions at a time to prevent increase in temperature. In addition, chicken wrap mix, spinach mix, and pesto chicken mix had an internal temperature of 46-47*F in reach-in cooler. PIC discarded lettuce at time of inspection.

Observed pork egg rolls and cheese taquitos with an internal temperature of 107-118*F on hot rollers ready for service. PIC stated they were moved too early and were moved to back section of rollers to re- heat and reach proper temperature.
