Observed all TCS food items on the salad bar holding 48-49F, such as leafy greens, boiled eggs, shredded cheese, tomatoes, potato salad, blue cheese. PIC said all items are held there from 11-2pm. The food was discarded. Observed all TCS food items in the walk in refrigerator holding 54-55F such as milk, cheese, meat, pasta salad, chicken, broccoli cheddar soup, lunch meat, and coleslaw. PIC discarded all items that were not delivered today and moved the new items to the freezer for rapid cooling. PIC called for maintenance and the refrigeration was corrected during the inspection.
