Observed smoked turkey cooling in a reach in cooler and completely covered in foil and stacked on top of each other. The turkey was holding 118F. PIC said it was put in the unit 20 minutes prior. PIC removed the foil from the turkey and placed them on a sheet pan to allow for faster cooling.

Final Construction inspection conducted with Ray D. Construction completed and approved. Inspection report was emailed to Ray D.***Establishment will receive smoked meats from their other location (FD-23-03015) located 3.5 miles from this location. All food items will be transported within cambros and kept warm within warmers or the steam table. All sides will be cooked onsite at this location. Establishment is not approved for outdoor cooking until the remodel has been approved for outdoor cooking. ***In house made BBQ sauces must be kept at 41'F and have a 7-day date mark. A 4-hour time as control policy was also discussed with Ray D. Provided contact information to Ray D. for the Department's variance/HACCP program.***All condiments for customers must be protected via self closing lids, sneeze guards or kept in single service containers. Correct the following items prior to the next routine inspection:1) Provide high temperature silver colored silicone to the gaps of the hood.2) Provide a 3/8" cove base to the wall and floor juncture underneath the soda cabinet. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Outdoor cooking area was not under construction of completed at the time of inspection. ***Establishment will receive smoked meats from their other location (FD-23-03015) located 3.5 miles away. All food items will be transported within cambros and kept warm within warmers or within the steam table. All sides will be cooked onsite at this location. Correct the following items prior to final inspection by 10/26/23:1) Provide an approved ASSE 1013 RPZ backflow device upstream of the soda carbonator/equipment. Do not install any copper or brass downstream of the backflow device and soda equipment. All lines and fittings must be PEX, plastic or stainless steel. Test and certify the backflow device and provide the test report. 2) Provide air gaps (ASSE 1055A) for the chem dispenser at the 3-comp sink sanitizer basin and mop sink chem dispenser.3) Provide cove base inside of the cabinet below the soda equipment. 4) Remove the old silicone within the gaps of the hood and reapply high temperature silver colored silicone.The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months.
