PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed the TCS foods, including turkey meat and pumpkin pies, stored in Unit 4 in the cafeteria had temperatures ranging from 52.5F to 54.3F, measured with a calibrated probe thermometer. TCS foods must be stored at 41F or below. It was unknown as to how long the food out of temperature as the required temperature logs were incomplete. There was also no corrective action listed on the log for previous temperature violations. TCS foods were discarded (see attached embargo form.). Observed that cold holding Unit 4 had a temperature of 52.5, measured with a calibrated min/max thermometer. The PIC stated that the unit had been having problems and called for service at the time of this inspection. The establishment has sufficient cold holding units to use until Unit 4 is fixed.
