At time of inspection right slicer set for 3:54 of time remaining and left slicer set at 4:00. Both slicers had visible food matter accumulation. Employee began using left slicer and hit timer for count down. Inspector asked deli PIC how many hours it had been since last disassembly and cleaning, PIC stated 3 hours prior. Discussed using timers accurately so staff can identify cleaning interval correctly.

Observed bone in and boneless wings improperly hot holding between 112-130*f degrees. 8 bin hot holding unit had just had dial set too low. Items had been refilled within the last 2 hours. Items re heated to 165*f degrees at time of inspection. Corrected
