#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

-- In warming cabinet for patient line, observed grilled chicken, steak, cooked Yukon potatoes, zucchini/squash vegetable mix, and asparagus with internal temperatures ranging between 95°F-112°F using probing thermometer. The ambient temperature of unit measured at 107.4°F using min/max thermometer. On cafeteria side, observed meatloaf in warmer at 128°F and container of sausage links on grill with internal temperatures of 105°F-119°F. The person in charge stated most items were prepared and placed in the warmer approximately 1.5 hours prior to the inspection (10 AM). The PIC voluntarily discarded the sausage links, grilled chicken, steak, and potatoes because they were unsure when those items were prepared. All other TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

-- The maximum ambient temperature of warming cabinet near patient line measured at 107.4°F using min/max thermometer. See violation above. At the time of inspection, the PIC placed an "out of order/do not use" sign on cabinet and put in a work order to repair equipment. Advised PIC that the cabinet can still be used for holding non-TCS foods such as biscuits, crispy bacon, bread, French toast, etc.. The establishment has sufficient heating capacities to safely remain open while awaiting repairs. Hot holding equipment must have the capacity to maintain TCS foods at 135°F or above. Corrective Action: Corrected at time of inspection.

-- In reach-in prep top cooler, observed diced ham, diced turkey, chopped turkey sausage, and chopped pork sausage with internal temperatures ranging between 51°F-55°F. All other TCS foods maintained at 41°F or less. The person in charge stated the items were prepped and placed in the unit approximately 15 minutes prior to the inspection. Reviewed approved cooling methods with the person in charge: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. At the time of inspection, all TCS foods being cooled in reach-in cooler were transferred to walk-in refrigerator to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
