Observed high temp dishwasher have a maximum surface temperature of 128-133°F with min/max thermometer. Baking sheets were actively being washed at time of inspection. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC will use quaternary ammonia to properly sanitize food contact surfaces. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Observed liquid eggs, shredded parmesan cheese, and butter in walk-in refrigerator with an internal temperature ranging 48-57*F. Person in charge stated foods were 41*F and unit door was open for deliveries and product storage for about an hour within 2 hours of inspection. Person in charge voluntarily discarded of eggs and placed remaining products placed in freezer for quick cooling to 41*F within 1 hour. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding.
