Inspector's notes

Observed an in-use ice machine at the back bar with black, slimy, organic-like material growing behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Internal temperature of all time/temperature control for safety (TCS) food items in the walk-in refrigerator measured between 46°F-53°F. Thermometer was calibrated on site. Per person in charge, food items measured below 41°F upon the start of their shift (11am) but noticed the temperature of the walk-in increasing about an hour prior to inspection. TCS items included various raw meats, eggs, deli meats, cheeses, and dairy based items. These foods were moved into the reach-in refrigerators/freezers until the unit is serviced. Establishment had adequate refrigeration to maintain operations. Reviewed cold holding requirements with the person in charge (PIC). Correct By: Corrected At Time Of Inspection

PIC was able to adjust the unit at time of inspection so that the ambient air temperature measured 41°F by the end of inspection. PIC still notified a repair technician to have the unit looked over. Establishment had adequate refrigeration to maintain operations. Reviewed cold holding equipment requirements to ensure foods are maintained at or below 41°F.
