Instructed operator for food to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. --Four large metal containers of cooked red and green chili in the left warehouse reach-in refrigerator measured internal temperatures between 47°F-52°F. Per person in charge (PIC), these items were cooling for about 3 and a half hours. Due to the amount of food and type of refrigerator it was placed in, it was determined that the food would not reach 41°F within 2 and a half hours. PIC moved the chili into smaller metal pans and placed them in the reach-in freezer and chest freezer to facilitate rapid cooling. Reviewed cooling methods with the PIC.
