Observed chicken and tuna salad with an internal temperature of 44-46*F actively cooling in large cold holding unit near grill. Person in charge stated food was prepared and placed in unit within 2 hours of inspection. All cooling should be completed in equipped units. Person in charge removed items and placed in walk-in. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Reviewed approved food storage areas with the PIC: food must be stored in a clean, dry location and at least 6 inches off the ground at all times to prevent contamination from the premises. Corrective Action: Correct prior to next routine inspection.
