Observed guacamole with tomatoes with an internal temperature of 50*F tightly sealed with plastic wrap under lid. Coleslaw in open display bin with an internal temperature of 45*F. Person in charge stated foods were actively cooling and was prepared within 2 hours of inspection. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Per the cook, the chicken was cooked/removed from grill less than 2hrs prior to this inspection. Keep lids off while cooling to facilitate rapid cooling of food. The chicken was placed on a sheet pan and placed inside the freezer where in was later observed below 40*F. Correct By: Corrected At Time Of Inspection
